I never knew portulaca grew wild. These plants came up in the cracks in the pavement and I left them there. Last year my housemate had planted white portulaca nearby.




Hello, morning glory!

The other day I made a very meaty meal with seitan. It is protein-rich wheat gluten that is leftover after you knead a ball of dough underwater. Then I simmered it in a savory broth to make it tender and flavorful.

It's actually very easy.

To 4 cups bread flour (which is higher in gluten) add about 2 cups water to make a ball of dough. Knead for 10 minutes, cover with water, and let sit for 30 minutes or more.

Then knead under water to remove the fiber and chaff, changing the water every time it becomes milky white. It'll take about 20 minutes of kneading (stress relief!).

Cut into desired shapes and simmer in a savory broth for about 40 minutes.
